The United Marine Training Center (UMTC) recently embarked on a bespoke journey with Swire Shipping: The Practical Cooking Enhancement Program for Cooks onboard vessels.

UMTC’s seasoned Culinary Training Department led the course development with Capt. Martin Pitt and Fleet Trainer, Capt. Isaias Despi Jr.

 

The program was meticulously crafted to bridge the gap between theory and practice, which sets it apart. Each module elevates cooking proficiency, from optimizing kitchen operations to enhancing menu planning, safety and nutrition, and provision management. The UMTC training also incorporates a variety of cuisines, such as European, Asian, and Indian, in a simulated onboard environment, ensuring a hands-on learning experience.

 

This empowers participants to improve their techniques and approaches to the dynamics of shipboard kitchens and ensure they are equipped to produce quality dishes on every voyage. This holistic approach sharpens their culinary prowess and strengthens their ability to adapt and innovate in diverse maritime settings.
