To develop and validate cooks’ competencies in preparing, cooking, and serving healthy menu plans. It further aims to provide chief cooks an underpinning knowledge of the basic mathematics principles and victualling calculations which are important in performing their day-to-day operations onboard.

Intended Training Outcome/s:
After the training, the trainees should:

  • Calculate provision parameters.
  • Prepare a healthy menu plan; and
  • Using basic mathematics principles in Cooking
